Lemon coconut protein bites

  1. Place dates, applesauce, lemon juice, lemon zest and vanilla in a food processor. Process until pureed and mixture is combined.
  2. Add coconut flour, protein powder and salt. Process until mixture forms a smooth ball of “dough.” (If mixture looks too dry, add 1-2 tsp water or almond milk).
  3. Roll into balls. Place shredded coconut in a small bowl and roll balls in coconut.
  4. Eat right away or store in an airtight container in the refrigerator.
  5. Enjoy!
