Salted date & espresso overnight oats

Ingredients
- 1 dates (dried and pitted) (~¼ oz)
- 1 tsp instant coffee powder (~⅛ oz)
- 1 cups almond milk (~8 oz)
- 2 tbsp chia seeds (~½ oz)
- ½ cups rolled oats (uncooked) (~1 ¾ oz)
- ½ cups berries, any kind (frozen or fresh) (~3 ½ oz)
- 15 peanuts (~⅔ oz)
- optional: ⅔ tsp vanilla extract
- optional: a tiny bit of salt
- optional: ⅓ tsp cinnamon
Instructions
- Mix all dry ingredients (oats, chia, cinnamon, salt, coffee powder) together in a large bowl.
- Add almond milk and mix again. Put in desired container.
- For best results put in the refrigerator, at least 2 hours or overnight. You may also serve right away.
- In the meantime, put dates and vanilla in food processor and puree on high. (If you do not have a food processor, finely chop dates). Wash or defrost berries.
- Top oats with date mixture, peanuts, and berries and enjoy!
