Creamy pasta with mushroom & parmesan

Ingredients
- 2 oz noodles or pasta, whole-grain (dry)
- ¾ cups mushrooms (sliced) (~1 ¾ oz)
- 1 oz parmesan (grated)
- 1 tbsp olive oil (extra virgin)
- 3 tbsp Greek yogurt, plain (low-fat) (~2 oz)
- optional: ¼ tsp black pepper
- optional: 1 tbsp fresh parsley (chopped)
Instructions
- Bring a large pot of water to boil. Add the pasta to the pot, and cook for around 9 minutes or according to the package directions. Meanwhile, follow the next steps.
- Heat the olive oil in a pan on medium heat.
- Meanwhile, clean and chop the mushrooms, and add them to the pan. Cook for 4 minutes. It goes well with fresh parsley and pepper if you want.
- Turn off the heat and mix in the greek yogurt.
- Top the pasta with the mushrooms sauce and grated parmesan, serve and enjoy!
