Feta, tomato & basil crackers

Ingredients
- 8 whole grain crackers (no added sugar) (~1 oz)
- 2 ¾ oz feta cheese
- 2 tsp fresh basil (chopped)
- 2 tsp olive oil (extra virgin)
- 2 tomatoes (~7 oz)
- optional: ¾ tsp black pepper
- optional: a tiny bit of salt
- optional: ½ garlic clove (~⅛ oz)
Instructions
- Wash and dice the tomatoes. Peel and chop garlic. Wash and chop basil. Add salt, pepper, and oil and mix all the ingredients in a bowl.
- Add the feta cheese and microwave for one minute (Heating optional. Can be served hot or cold).
- Serve with crackers and enjoy!
