Cloud pancake with hummus and tomato

Ingredients
- 1 ½ oz cream cheese
- 2 whole eggs (~3 ½ oz)
- ¼ tsp baking powder (~⅛ oz)
- 2 ¼ oz hummus
- 1 tomatoes (~3 ½ oz)
- 1 ½ tsp olive oil (extra virgin)
- optional: 2 tsp fresh basil (chopped)
- optional: 1 ½ tsp honey or agave syrup (~⅓ oz)
Instructions
- Separate egg white(s) from egg yolk(s). Place in two different bowls.
- Add cream cheese and honey (or alternative sweetener) to bowl with egg yolks. Mix until creamy.
- Add baking powder to egg white(s) and beat until stiff.
- Carefully fold in the beaten egg whites to the egg yolk mixture.
- Heat oil in a pan on medium heat. Add two tablespoons of the mixture and fry for around 3 minutes. Repeat until no mixture left.
- Wash tomatoes and slice them.
- Serve cloud pancake with hummus, tomato slices and fresh basil. Drizzle with salt.
