Cherry basil ricotta toast

Ingredients
- 2 whole grain bread slice(s), 100% whole grain (~3 oz)
- 2 ½ oz ricotta cheese
- 1 tbsp honey or agave syrup (~¾ oz)
- 8 cherries (fresh or frozen)
- optional: 1 tsp vanilla extract
- optional: 2 ½ tsp fresh basil (chopped)
Instructions
- If using frozen cherries, allow to defrost and then chop. If using fresh cherries, remove pit and chop.
- Add sweetener and chopped basil to cherries, tossing to coat.
- In a small bowl, stir together vanilla and ricotta cheese.
- Toast bread, if desired, and spread ricotta on toast.
- Top with marinated cherries and sprinkle of basil.
