Cherry basil ricotta toast

  1. If using frozen cherries, allow to defrost and then chop. If using fresh cherries, remove pit and chop.
  2. Add sweetener and chopped basil to cherries, tossing to coat.
  3. In a small bowl, stir together vanilla and ricotta cheese.
  4. Toast bread, if desired, and spread ricotta on toast.
  5. Top with marinated cherries and sprinkle of basil.
